The Wines

 



 

Pignoletto is the name of an autochthonous grape by which this unique and delicious wine is obtained: this is properly considered "The king of Bologna hills wines". An accurate selection of the slightly over-ripened grapes is  the most important step of the realization of this delicious wine. 30% of this wine is placed to ferment inside French Central Massif oak barrels, while the remaining 70% ferments in steel marc vats. At the end of winter the two parts are finally blended. The result is a wine with a pleasant flowery fragrance. In the mouth it is fresh and well structured. Alcohol: 12.5-13% vol. approximately.

Organoleptic information

Colour: Pale yellow with greenish shades .
Scent: Fruity with marked flowery fragrances.
Taste: outstanding balance between freshness and structure. Persistent residual taste.
Gastronomy: first courses, white meats and fish.
Service temperature: 10°-12° C approx.

Production area: Bologna's hills DOC area - Micro zone: Monte San Pietro. It is located in the "Pignoletto Classico" area, which is an even restricted area of the “Colli Bolognesi” one.
